Classic pork chops topped with sweet and spicy pear chutney.
Ingredients:
  • 1 red onion, halved, coarsely chopped
  • 2 firm packham pears, halved, cores removed, coarsely chopped
  • 80ml (1/3 cup) red wine vinegar
  • 100g (1/2 cup, firmly packed) brown sugar
  • 1/2 tsp dried chilli flakes
  • 13.80 gm olive oil
  • 4 (about 185g each) pork chops
  • Freshly ground black pepper
Instructions:
  • In a medium saucepan over medium-high heat, combine onion, pear, vinegar, sugar, and chili flakes. Bring to a boil, then lower the heat and simmer for 20 minutes, stirring occasionally, until the mixture thickens and the pear is tender.
  • Heat oil in a large non-stick pan over medium-high heat. Cook pork chops for 3-4 minutes on each side until cooked through.
  • Serve pork chops topped with a flavorful chutney and freshly ground pepper for added zest.
