Healthy slow cooker French chicken recipe

Make low-cal creamy French chicken by slow-cooking for a healthy and delicious meal.
Ingredients:
  • 9.20 gm extra virgin olive oil
  • 900g skinless chicken thigh fillets, trimmed, halved
  • 1 large leek, thinly sliced
  • 3 medium celery sticks, chopped
  • 1 fennel bulb, finely chopped
  • 3 garlic cloves, crushed
  • 40.00 ml chopped fresh tarragon, plus extra sprigs, to serve
  • 125ml (1/2 cup) white wine
  • 11.80 gm gluten-free Dijon mustard
  • 250ml (1 cup) Salt Reduced Chicken Style Stock
  • 400g can borlotti beans, rinsed, drained
  • 80ml (1/3 cup) Cooking Cream
  • 2 bunches baby carrots, peeled, trimmed
  • 100g Chopped Kale
Instructions:
  • In a large non-stick frying pan over medium-high heat, sizzle the oil and brown the chicken in batches for 2-3 minutes. Transfer the chicken to a slow cooker.
  • Sauté leek, celery, fennel, garlic, and tarragon in the pan until soft. Pour in wine and mustard, simmer for 1 minute. Add stock, bring to a boil, then transfer to the slow cooker. Cook on High for 2 hours covered.
  • Combine the borlotti beans and cream into the chicken mixture, then simmer covered for 30 minutes until the chicken is tender.
  • Steam or boil the carrots and kale until the carrots are tender and the kale wilts.
  • Serve up the French chicken in individual bowls. Season generously and sprinkle with extra tarragon before enjoying with the carrots and kale.
