Try these tasty Tex-Mex sloppy joes for a quick and healthy dinner!
Ingredients:
  • 1 can (16 oz) spicy chili beans in sauce, undrained
  • 1 lb extra-lean (at least 95%) ground beef
  • 1 cup chopped green pepper
  • 1 cup chopped red bell pepper
  • 1 cup chopped onion
  • 1 jalapeño chile, seeded, diced
  • 1/4 cup ketchup
  • 1 teaspoon chili powder
  • 1/4 teaspoon pepper
  • 2 teaspoons fresh lime juice
  • 8 whole wheat burger buns
Instructions:
  • Coat a 3 1/2- to 4-quart slow cooker with cooking spray. Transfer chili beans to a medium bowl. Mash roughly half of the beans using a potato masher or fork.
  • In a large skillet over medium heat, sauté the beef, green and red bell peppers, onion, and jalapeño chile for 8 to 10 minutes, stirring occasionally, until the beef is browned. Drain any excess fat.
  • Transfer the beef mixture into the slow cooker. Combine with beans, ketchup, chili powder, and pepper, stirring well. Cover and cook on Low heat setting for 2 1/2 to 3 hours or until reaching 165°F. Finish by stirring in the lime juice.
  • Scoop generous portions of the savory beef mixture into each soft bun. Enjoy while still warm.
