Spinach salad with hearts of palm, avocado, tomatoes, mushrooms, and sweet-spicy vinaigrette.
Ingredients:
  • 2 (10 ounce) bags fresh spinach, rinsed and dried
  • 1 (14.25 ounce) can hearts of palm, drained and chopped
  • 1 pint cherry tomatoes
  • 2 large avocados - peeled, pitted and diced
  • 1 (10 ounce) package fresh mushrooms, sliced
  • 0.33333334326744 cup sliced almonds
  • 0.5 cup canola oil
  • 0.33333334326744 cup white vinegar
  • 0.5 cup ketchup
  • 2 cloves garlic, chopped
  • 0.5 cup sugar
  • 1 teaspoon salt
  • 0.5 teaspoon dry mustard powder
  • 0.5 teaspoon paprika
Instructions:
  • Combine spinach, hearts of palm, tomatoes, avocados, mushrooms, and almonds in a large serving bowl.
  • In a jar, mix oil, vinegar, ketchup, garlic, and sugar. Add salt, mustard, and paprika for seasoning. Close the lid tightly and shake vigorously until fully combined.
  • Drizzle the dressing over the salad and gently mix until everything is evenly coated before serving.
