Delicious Southern okra dish with andouille sausage, corn, tomatoes, onions, and celery.
Ingredients:
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 4 stalks celery, chopped
  • 2 onions, chopped
  • 4 ears fresh corn, shucked and kernels scraped from cob
  • 2 pounds fresh okra, cut into 1/2 inch slices
  • 2 (28 ounce) cans whole tomatoes, broken up
  • 0.5 pound andouille sausage, diced
  • 0.5 teaspoon Creole seasoning, or to taste
  • sea salt and ground black pepper to taste
Instructions:
  • In a large pot, melt butter with olive oil over medium heat. Sauté celery and onions until translucent, approximately 5 minutes. Add corn kernels and cook for an additional 3 minutes.
  • Add okra, tomatoes, andouille sausage, and Creole seasoning to the pot. Let it simmer covered over medium heat until the okra loses its sliminess, which should take at least 45 minutes. Season with sea salt, black pepper, and add more Creole seasoning if desired. Uncover and cook for an additional 10 minutes to thicken the liquid.
