Creamy ham casserole with corn and cubed potatoes, a comforting winter meal.
Ingredients:
  • 2 cups potatoes, cubed
  • 2 cups cooked ham, cubed
  • 1 (15.25 ounce) can whole kernel corn, drained
  • 0.25 cup finely minced fresh parsley
  • 0.25 cup butter
  • 1 tablespoon chopped onions
  • 0.33333334326744 cup all-purpose flour
  • 1.75 cups milk
  • 0.125 teaspoon ground black pepper
  • 4 ounces processed cheese food, shredded
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and generously grease an 11x7-inch baking dish.
  • Bring a pot of salted water to a boil, then boil potatoes until tender yet firm, about 15 minutes. Drain and let cool.
  • In a large bowl, mix together potatoes, ham, corn, and parsley; set aside.
  • In a large saucepan over medium-high heat, melt butter. Sauté onions in the butter for 2 minutes. Add flour and stir until combined. Slowly pour in milk while stirring constantly; season with pepper. Bring to a boil and cook for 2 minutes. Pour over ham mixture and stir well. Transfer to a prepared baking dish.
  • Place the dish in the oven, covered, and bake for 25 minutes. Remove the cover, sprinkle cheese on top, and bake for an additional 5 to 10 minutes, or until the cheese is melted.
