Cheesy ham and corn casserole made with Original Bisquick® mix for a hearty dinner.
Ingredients:
  • 1 2/3 cups water
  • 1 cup whipping cream
  • 2 tablespoons butter or margarine
  • 1/4 teaspoon pepper
  • 2/3 cup uncooked quick-cooking corn grits
  • 2 cups shredded Swiss cheese (8 oz)
  • 4 cloves garlic, finely chopped
  • 8 eggs
  • 2 cups chopped extra-lean deli ham
  • 6 green onions, chopped
  • 2 cups milk
  • 3 cups Original Bisquick™ mix
Instructions:
  • Preheat oven to 350°F and lightly coat a 13x9-inch (3-quart) glass baking dish with cooking spray.
  • Heat water, whipping cream, butter, salt, and pepper in a medium saucepan until boiling. Slowly mix in grits, then reduce heat, cover, and simmer for 5 to 7 minutes, stirring occasionally. Mix in 1/2 cup of cheese and garlic until cheese melts. Let it cool for 10 to 15 minutes, then add 2 eggs. Pour mixture into a baking dish and bake for 20 minutes. After baking, increase oven temperature to 400°F.
  • Spread the remaining 1 1/2 cups of cheese, ham, and onions over the partially baked crust. In a medium bowl, whisk together the remaining 6 eggs and 1/2 cup milk, then pour over the ham mixture. Combine the remaining 1 1/2 cups of milk with the Bisquick mix and pour over the egg mixture, spreading it to the edges of the dish with the back of a spoon. Bake for 35 minutes, then allow to cool for 10 minutes before cutting into squares.
