Ham and Swiss Appetizer Cheesecake

Ham and Swiss cheese mini cheesecakes: Convenient make-ahead savory appetizer with a classic flavor combo.
Ingredients:
  • 1 cup crushed round wheat crackers (about 28 crackers)
  • 3 tablespoons butter or margarine, melted
  • 2 packages (8 ounces each) cream cheese, softened
  • 1/4 cup whipping (heavy) cream
  • 2 eggs
  • 2 cups finely shredded Swiss cheese (8 ounces)
  • 1 cup chopped fully cooked ham
  • 1/2 cup chopped drained roasted red bell peppers (from 7.25-ounce jar)
  • 4 medium green onions, sliced (1/4 cup)
  • 2 tablespoons chopped fresh or 1/2 teaspoon dried thyme leaves
  • 1 package (13 ounces) assorted crackers
Instructions:
  • Preheat the oven to 350°. Combine crushed crackers and butter until fully mixed. Press the mixture evenly into the bottom of a 9x3 inch springform pan. Bake for 8 to 10 minutes, or until it turns a beautiful golden brown.
  • In a large bowl, use an electric mixer on medium speed to beat cream cheese until smooth. Add whipping cream and eggs, and beat until mixture is smooth. Stir in cheese, ham, bell peppers, onions, and thyme. Evenly spoon the mixture over the crust in the pan.
  • Bake for 45 to 55 minutes until the center is set, then gently run a knife around the edge of the cheesecake to loosen it. Allow the cheesecake to cool completely for about 1 hour. Cover and refrigerate for at least 2 hours, but no more than 48 hours.
  • Remove the pan's side, transfer the cheesecake to a serving platter, cut into wedges, and enjoy with crackers.
