Cheesy veggie and potato hash with eggs.
Ingredients:
  • 3 potatoes, peeled
  • 6 ounces bacon, chopped
  • 0.5 cup chopped onion
  • 0.5 cup chopped green bell pepper
  • 1 teaspoon chopped garlic
  • 1 cup chopped fresh tomatoes
  • salt and pepper to taste
  • 6 ounces Cheddar cheese, shredded
  • 8 eggs
Instructions:
  • 1. Boil salted water in a pot. Add potatoes and cook for about 15 minutes until tender but still slightly firm. Drain, let them cool, and chop.
  • In a large, deep skillet over medium high heat, crisp up the bacon until it's evenly browned. Then, toss in the onions, peppers, garlic, tomatoes, and potatoes. Season everything with salt and pepper and cook until the veggies are soft, which should take around 5 minutes.
  • Sprinkle the vegetable mixture with cheese, then crack the eggs into the pan a few inches apart. Cover and let the eggs cook until they reach your preferred firmness. Remove from heat and serve.
