Sheet Pan English Breakfast: All-in-one meal with easy cleanup. Just add toast for a hearty breakfast.
Ingredients:
  • 1 1/2 pounds pork or chicken sausage (preferably links weighing 6-8 ounces each)
  • 1 cup grape tomatoes, halved
  • 8 to 10 ounces baby cremini mushrooms, halved
  • 3 tablespoons olive oil, divided
  • 1 (15-ounce) can pinto beans
  • 1 tablespoon packed brown sugar
  • 1 tablespoon ketchup
  • 1 tablespoon barbecue sauce
  • 4 large eggs
  • Salt and pepper
  • 3 whole sprigs fresh thyme
  • Toast, to serve
Instructions:
  • Preheat the oven to 400°F and generously grease a sheet pan with 1 tablespoon of olive oil to ensure the food won't stick.
  • Place the sausage links on a baking sheet and bake for 15 minutes to perfection.
  • Using tongs, flip the sausage on the sheet pan. Add grape tomatoes cut side up, sprinkle with a pinch of salt and pepper, then return to the oven to bake for 15 minutes.
  • Prep the remaining ingredients: Coat the mushrooms with 1 tablespoon of olive oil and season with a pinch of salt and pepper. Set aside. Drain and rinse the pinto beans, then combine them with brown sugar, ketchup, and barbecue sauce. Place the beans in a small oven-safe skillet or dish.
  • After baking the sausages for 30 minutes and the tomatoes for 15 minutes, carefully remove the sheet pan from the oven. If there is excess liquid, pour it off without disturbing the tomatoes. Add the prepared mushrooms to the pan and place it back in the oven.
  • Gently add beans and crack eggs onto sheet pan with sausages. Drizzle oil in egg pockets, disperse fresh thyme. Bake for 15 more minutes, drain excess liquid, and enjoy!
  • Bake the eggs until the whites are set, either for 5 minutes for slightly runny yolks or for 8 minutes for hard-cooked yolks. Meanwhile, prepare the toast.
  • After removing the sheet pan from the oven, let it cool for a moment. Season everything with a sprinkle of salt and pepper. Slice the sausage, then distribute it evenly among the plates. Serve with beans, roasted tomatoes and mushrooms, eggs, and crispy toast.
