Hearty Spanish Rice Bake

Spanish Rice Bake: Ground beef, onion, bell pepper, garlic, tomatoes, and rice cooked in sweet-hot sauce, topped with Cheddar cheese, and fresh cilantro.
Ingredients:
  • 1 pound lean ground beef
  • 0.5 cup finely chopped onion
  • 0.25 cup chopped green bell pepper
  • 1 (10 ounce) can diced tomatoes with green chile peppers (such as RO*TEL®)
  • 1 cup water
  • 0.75 cup long-grain white rice
  • 0.5 cup chile sauce
  • 1 (4 ounce) can sliced black olives, or to taste
  • 2 tablespoons sliced jalapeno peppers, or to taste
  • 2 cloves garlic, minced
  • 1 teaspoon brown sugar
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon Worcestershire sauce
  • 1 pinch ground black pepper
  • 2 cups shredded Cheddar cheese, divided
  • 2 tablespoons chopped fresh cilantro
Instructions:
  • Preheat oven to 375°F (190°C) for the perfect cooking temperature.
  • In a large skillet over medium-high heat, sauté beef, onion, and green bell pepper until beef is browned and crumbly, about 5 to 7 minutes. Drain off excess grease before continuing.
  • Combine beef mixture, diced tomatoes with green chile peppers, water, rice, chile sauce, olives, jalapeno peppers, garlic, salt, brown sugar, ground cumin, Worcestershire sauce, cayenne pepper, and black pepper in a large pot over medium-low heat, stirring gently.
  • Simmer the beef-rice mixture until flavors meld for about 30 minutes, stirring occasionally. Mix in 1 cup of Cheddar cheese. Transfer the mixture to a 2 1/2 quart casserole dish, press down firmly, and sprinkle the remaining 1 cup of Cheddar cheese on top.
  • Bake until the cheese is melted and bubbling, for about 10-15 minutes. Sprinkle with chopped cilantro before serving.
