Indulge in a rich Swiss cheese potato casserole with layers of creamy gravy, Gruyere cheese, garlic, scallions, and fragrant rosemary.
Ingredients:
  • 0.25 cup butter
  • 0.25 cup whole wheat flour
  • 1.6666667461395 cups water, divided
  • 1.5 teaspoons cornstarch
  • 1 pinch salt and ground black pepper to taste
  • 0.5 teaspoon ground thyme
  • 0.5 teaspoon dried rosemary
  • 0.75 cup shredded Swiss cheese
  • 0.75 cup shredded Swiss Gruyere cheese
  • 3 medium potatoes, peeled and thinly sliced
  • 2 scallions, finely chopped
  • 1 clove garlic, minced
Instructions:
  • In a saucepan over medium-low heat, gently melt butter until simmering. Gradually whisk in flour, one tablespoon at a time, until fully combined, about 5 to 8 minutes. Slowly pour in 1 cup of water while whisking constantly to prevent lumps. Remove from heat.
  • In a small bowl, mix 2/3 cup of water with cornstarch to create a slurry. Pour into the gravy and whisk until well combined.
  • Preheat the oven to 375°F (190°C) for a perfect bake.
  • Gently mix the gravy and season with salt and pepper. Incorporate thyme, rosemary, Swiss cheese, and Gruyere cheese. Combine with potatoes, scallions, and garlic until potatoes are evenly coated. Transfer the mixture to an 8-inch square baking dish.
  • Roast in the oven until the potatoes are tender, for 40 to 50 minutes.
