Try this hearty beef and veggie skillet for a delicious dinner option.
Ingredients:
  • 1 1/2-lb beef boneless round, tip or chuck steak, about 3/4 inch thick
  • 3 tablespoons all-purpose flour
  • 1 teaspoon ground mustard
  • 1/2 teaspoon salt
  • 2 tablespoons vegetable oil
  • 1 can (14.5 oz) whole tomatoes, undrained
  • 2 cloves garlic, finely chopped
  • 1 cup water
  • 1 large onion, sliced
  • 1 large bell pepper, sliced
Instructions:
  • Cut the beef into 6 serving pieces. In a small bowl, combine flour, mustard, and salt. Sprinkle half of the flour mixture over one side of the beef and pound it in with a meat mallet. Flip the beef and pound in the remaining flour mixture.
  • Heat oil in a 10-inch skillet over medium heat. Brown the beef in the oil for about 15 minutes, turning once.
  • Place the tomatoes and garlic in a skillet, gently mashing the tomatoes with a fork. Bring to a boil, then lower the heat, cover, and simmer for about 1 hour and 15 minutes. Occasionally spoon the sauce over the beef until it is tender.
  • Place a skillet on the heat and add water, onion, and bell pepper. Bring it to a boil, then lower the heat, cover, and simmer for 5 to 8 minutes until the vegetables are tender.
