Hearty Tomato Sausage Penne Bake

Quick and delicious Italian sausage pasta bake ready in under an hour for a perfect dinner!
Ingredients:
  • 2 1/2 cups uncooked penne pasta (8 oz)
  • 1 lb bulk Italian pork sausage
  • 1 medium onion, chopped (1/2 cup)
  • 1 medium green or red bell pepper, cut into bite-size strips
  • 1 can (19 oz ) Progresso™ Vegetable Classics hearty tomato soup
  • 1/2 teaspoon dried basil leaves
  • 1 package (8 oz) Italian cheese crumbles (mozzarella, provolone, Romano and Asiago cheeses)
Instructions:
  • Preheat oven to 350°F. Grease a 13x9-inch (3-quart) glass baking dish with cooking spray. Cook pasta according to package instructions.
  • In a large skillet, sauté sausage, onion, and garlic over medium-high heat for 5 minutes, stirring occasionally. Add bell pepper and cook for 2 more minutes until sausage is fully cooked; drain any excess fat. Stir in soup and basil, then bring to a boil.
  • After draining the pasta, layer it in a baking dish. Sprinkle evenly with 1 cup of cheese crumbles, then pour the sausage mixture over the pasta.
  • Cover with foil and bake for 25 minutes. Uncover, sprinkle with the remaining cheese crumbles, and bake for an additional 3 to 5 minutes, or until the cheese is melted.
