Hearty Tomato Skillet Chicken Parmigiana

Upgrade your chicken dinner with a rich tomato sauce made easy using Progresso® hearty tomato soup in a skillet.
Ingredients:
  • 4 boneless skinless chicken breasts (about 1 1/4 lb)
  • 1/4 cup Progresso™ Italian-style bread crumbs
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon garlic salt
  • 2 tablespoons olive or vegetable oil
  • 1 can (19 oz) Progresso™ Vegetable Classics hearty tomato soup
  • 1/2 cup shredded mozzarella cheese (2 oz)
Instructions:
  • Place each chicken breast between sheets of plastic wrap or waxed paper and gently pound with a meat mallet or rolling pin until about 1/4 inch thick.
  • Combine bread crumbs, Parmesan cheese, garlic salt, and basil in a bowl. In a separate bowl, beat an egg. Dip the chicken in the egg, then coat it with the crumb mixture.
  • Heat oil in a 12-inch skillet over medium heat. Cook chicken for 5 to 7 minutes, turning once, until the center of the thickest part reaches 170°F and the juice runs clear. Remove chicken from skillet and keep it warm.
  • Transfer the soup into a skillet and bring it to a boil over medium-high heat. Allow it to boil for 4 to 5 minutes while occasionally stirring until it slightly thickens.
  • Add the cooked chicken back to the skillet over low heat, then generously sprinkle mozzarella cheese on top. Cover and cook for 2 to 3 minutes until the cheese is perfectly melted.
