Easy 5-ingredient dinner ready in 20 minutes.
Ingredients:
  • 1 brown onion, finely chopped
  • 420g mixed vegetables
  • 400g can lentils, rinsed, drained
  • 400g can diced tomatoes
  • 500ml vegetable stock
Instructions:
  • In a large non-stick saucepan over medium heat, sauté the onion in 1 tablespoon of water for about 3 minutes until softened, stirring occasionally.
  • Combine the vegetables, lentils, tomato, stock, and 4 cups (1L) of water in the pan and bring to a boil. Reduce heat and simmer gently for 10 minutes until the vegetables are tender and the mixture is heated through.
