Classic white cake made with cake flour, butter, egg whites, milk, vanilla, and almond extracts.
Ingredients:
  • 2.75 cups sifted cake flour
  • 4 teaspoons baking powder
  • 0.75 teaspoon salt
  • 4 egg whites
  • 1.5 cups white sugar
  • 0.75 cup butter
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
Instructions:
  • Sift cake flour, baking powder, and salt together three times after measuring.
  • In a mixing bowl, whisk egg whites until foamy. Gradually add 1/2 cup sugar while continuing to whisk until meringue forms soft peaks.
  • Cream butter until velvety. Slowly incorporate the remaining 1 cup of sugar until light and fluffy. Alternate adding sifted ingredients and milk incrementally, blending until smooth after each addition. Integrate flavorings, then thoroughly mix in meringue. Spread batter evenly in a 15 x 10 x 1-inch pan lined with parchment paper.
  • Bake at 350°F (175°C) for 30-35 minutes, then cool in the pan for 10 minutes before transferring to a wire rack to finish cooling. Alternatively, divide the batter into two 9-inch pans for 30-35 minutes of baking, or three 8-inch pans for 25-30 minutes.
