Heirloom tomato and mixed bean salad with blue cheese dressing recipe

Impressive tomato and bean salad with rich blue cheese dressing, ideal for guests.
Ingredients:
  • 250.00 ml frozen broad beans
  • 125g green beans, trimmed, halved diagonally
  • 400g can butter beans, drained, rinsed
  • 62.50 ml chopped fresh chives
  • 2 Kumatoes, thickly sliced
  • 2 medium heirloom tomatoes, thickly sliced
  • 81.68 gm whole-egg mayonnaise
  • 37.60 gm sour cream
  • 21.00 gm lemon juice
  • 1 garlic clove, crushed
  • 75g blue cheese, crumbled
Instructions:
  • Boil broad beans and green beans in a saucepan for 2 minutes until vibrant and tender. Drain, cool under cold water, and remove skins from broad beans before serving.
  • In a small food processor, blend together mayonnaise, sour cream, lemon juice, garlic, 1 tablespoon water, and half of the blue cheese until smooth. Add pepper to taste.
  • In a large bowl, mix drained beans, butter beans, and 2 tablespoons of chives. Season with salt and pepper. Transfer the bean mixture and tomatoes onto a serving platter. Drizzle with dressing and sprinkle with the rest of the blue cheese and chives. Serve and enjoy!
