Ingredients:
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 0.75 teaspoon ground cumin
  • 0.75 teaspoon kosher salt
  • 0.75 teaspoon ground black pepper
  • 0.25 teaspoon chili powder
  • 2 (6 ounce) skinless, boneless chicken breast halves
  • 1.5 tablespoons olive oil, divided
  • 1 medium ripe avocado, diced
  • 1 medium heirloom tomato, seeded and diced
  • 0.5 small red onion, diced
  • 1 teaspoon lime juice, or to taste
Instructions:
  • Get the grill blazing hot outside and give the grate a light oiling.
  • In a small bowl, mix together onion powder, garlic powder, cumin, salt, pepper, and chili powder. Season the chicken evenly with the spice mixture, making sure to coat it well. Drizzle the chicken with 1 tablespoon of olive oil.
  • Place the chicken on the hot grill and cook for a total of about 12 minutes, flipping once, until fully cooked with clear juices and an internal temperature of 165 degrees F (74 degrees C).
  • Take the grilled chicken off the heat and generously drizzle with the remaining olive oil. Allow it to rest for 10 minutes.
  • Combine ripe avocado, fresh tomato, and red onion in a small bowl to create a delicious salsa. Finish by squeezing fresh lime juice over the mixture and seasoning with a sprinkle of salt and a dash of pepper.
  • Top sliced chicken with zesty salsa for a burst of flavors.
