Kick off your party with a delectable Greek mezze platter featuring charred haloumi and zesty salsa.
Ingredients:
  • 60ml (1/4 cup) olive oil
  • 42.00 gm fresh lemon juice
  • 28.60 gm honey
  • salt and pepper, to season
  • 1 tomato, seeded, finely chopped
  • 2 x 250g pkts haloumi
  • Baby rocket leaves, to serve
Instructions:
  • Prepare the salsa by mixing olive oil, lemon juice, and honey in a small container. Add a dash of salt and pepper, then fold in the tomato.
  • Cook the haloumi: Slice the haloumi into 1cm-thick pieces. Heat a chargrill or barbecue grill on medium-high. Lightly spray the haloumi slices with olive oil spray and grill for 2 minutes on each side until golden. Avoid overcooking to maintain a tender texture.
  • Presentation: Place the haloumi on a platter and generously spoon the salsa on top. Serve promptly alongside baby rocket leaves.
