Herb blinis with prosciutto

Perfect bite-sized blinis for your guests to enjoy with their cocktails.
Ingredients:
  • 150g self-raising flour
  • 20.00 ml chopped chives
  • 20.00 ml shredded basil
  • 185ml milk
  • 200ml creme fraiche or sour cream
  • 1 tsp horseradish cream
  • Salt and pepper, to season
  • Prosciutto, to top
  • Continental parsley leaves, to garnish
Instructions:
  • Mix 1 cup (150g) self-raising flour with 1 tablespoon chopped chives and 1 tablespoon shredded basil. Stir in 3/4 cup (185ml) milk and 1 egg. Heat a non-stick frying pan over medium heat, grease lightly, and spoon batter into pan to make 5cm blinis. Cook until golden on both sides, about 1-2 minutes each. Let cool before serving.
  • Mix together 200ml creme fraiche and 1 teaspoon horseradish cream until creamy. Season with salt and pepper to taste.
  • Cut each of the 6 prosciutto slices into quarters. Spread a dollop of creme fraiche on each blini, then garnish with prosciutto and a sprig of continental parsley.
