Herb cobbler mince casserole

Transform leftover mince sauce into a delectable beef casserole with a crispy topping.
Ingredients:
  • 9.20 gm olive oil
  • 175g bacon rashers, rind removed, roughly chopped
  • 1000.00 ml frozen multi-purpose mince sauce, (leftover from Chilli con carne - see related recipe), thawed
  • 250.00 ml flat-leaf parsley leaves, finely chopped
  • 225.00 gm self-raising flour
  • 125.00 ml plain flour
  • 193.13 gm milk
  • 60g butter, melted, cooled
Instructions:
  • Preheat your oven to 200°C and generously grease a 6cm deep, 18cm x 26cm (base) 8-cup capacity ovenproof baking dish.
  • In a non-stick frying pan over medium heat, cook bacon in hot oil until crisp (3 to 4 minutes). Drain on paper towels, then transfer to a large bowl. Mix in mince sauce and half the parsley until well combined. Spoon mixture into a prepared baking dish.
  • Combine self-raising flour and plain flour, season with salt and pepper, and mix in the rest of the parsley. Create a well in the center, then pour in the milk and butter. Stir with a flat-bladed knife until a soft dough forms. Take 2 tablespoons of dough, shape into balls, slightly flatten, and place over the mince mixture.
  • Place the baking dish on a tray in the oven and bake for 25 to 30 minutes until the dough is golden and the mince mixture is piping hot. Serve hot.
