Ingredients:
  • 46.80 gm Dijon mustard
  • 3 thick slices wholemeal bread
  • 7g fresh flat-leaf parsley, finely chopped
  • 1 finely grated lemon zest
  • 1 crushed garlic clove
  • 60ml olive oil
  • Sea salt
  • Freshly ground black pepper
  • 2 French-trimmed lamb racks (8 ribs on each)
  • Olive oil, extra
Instructions:
  • Preheat your oven to a toasty 180C (350F/Gas 4).
  • Spread the bread on a baking tray and bake for 20 minutes, or until golden. Let it cool before crushing it by hand or in a food processor to make breadcrumbs.
  • Combine breadcrumbs, parsley, zest, garlic, olive oil, salt, and pepper in a bowl and mix well.
  • Drizzle the lamb racks with a touch of extra virgin olive oil and generously season with salt and pepper.
  • Preheat a large frying pan over high heat. Sear the racks fat-side down for 2 minutes. Transfer them to a baking tray.
  • Brush mustard on top of the lamb racks and coat with the breadcrumb mixture. Roast for 25-30 minutes until perfectly pink. Let the lamb rest in a foil-covered baking tray for 5 minutes after removing from the oven.
  • Halve each rack before serving.
