Delicious pasta and veggie salad - ideal side dish for Italian meals.
Ingredients:
  • 1 1/4 cup balsamic vinaigrette dressing
  • 1 tablespoon Italian seasoning
  • 1 medium green bell pepper, cut into 3 pieces
  • 1 medium zucchini, cut in half lengthwise
  • 1 medium eggplant (1 1/2 lb), cut lengthwise into 1/2-inch slices
  • 1 medium onion, cut into 1/2-inch slices
  • 1 package (16 oz) tricolor fusilli pasta
  • 1/2 cup shredded Parmesan cheese
Instructions:
  • Combine the dressing, Italian seasoning, bell pepper, zucchini, eggplant, and onion in a large nonmetal dish or a 2-gallon resealable plastic bag. Ensure everything is evenly coated, then cover and let it sit for 1 hour to allow the flavors to blend.
  • Cook the pasta according to the package instructions, then rinse it with cold water, drain well, and set aside.
  • Preheat gas or charcoal grill. Place vegetables in a grill basket or directly on the grill rack, and set aside the dressing.
  • Preheat grill over medium heat with a grill basket. Cook vegetables for 10 to 15 minutes, turning and brushing with dressing until tender. Cover for even cooking.
  • Combine the cooked pasta with the reserved dressing, salt, and pepper in a large serving bowl. Dice the vegetables, fold them into the pasta, and sprinkle cheese over the top.
