Grilled veggie packets with summer squash, zucchini, and red bell pepper, perfectly seasoned for a delicious summer picnic dish.
Ingredients:
  • 1 medium or large yellow summer squash, cut into 1/4-inch-thick slices
  • 6 sprigs fresh thyme
  • 1 medium or large zucchini, cut into 1/4-inch-thick slices
  • 1 red bell pepper, cut into strips
  • 2 large cloves garlic, finely chopped
  • 2 tablespoons Land O Lakes® Butter with Olive Oil & Sea Salt
  • Salt and pepper to taste
Instructions:
  • Preheat the grill, then lay out a large sheet (about 24x12-inch) of heavy-duty foil. Arrange yellow squash in the middle of the foil, then layer with 3 sprigs of thyme. Add zucchini, the remaining 3 thyme sprigs, bell pepper, and garlic. Cut the butter into 8 pieces and scatter around the vegetables.
  • Bring up two sides of the foil so that the edges meet. Seal the edges with a tight 1/2-inch fold, then fold again to allow space for heat circulation and expansion. Seal the other sides by folding them.
  • Grill the packet over medium heat for 15 to 20 minutes, flipping it once, until the vegetables are crisp-tender. Cut open the packet carefully to release the steam. Transfer the vegetables to a serving bowl and season with salt and pepper.
