Sweet Grilled Corn

Grilled sweet corn coated in cheesy herb butter, perfect side for any summer dish.
Ingredients:
  • 8 ears corn, husk and silk removed
  • 0.5 cup butter, melted
  • 1.5 tablespoons macadamia nut oil
  • 2 tablespoons minced garlic
  • 1 teaspoon crushed rosemary
  • 1 teaspoon rubbed sage
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme leaves
  • 1.5 teaspoons salt
  • 1.5 teaspoons pepper
  • 0.5 cup grated Parmesan cheese
  • 8 sheets aluminum foil
Instructions:
  • Submerge fresh corn in chilled water for 1 to 3 hours.
  • Heat up your grill outdoors until it reaches a medium temperature. Drain the corn and gently pat it dry.
  • Combine melted butter and oil in a bowl, then mix in garlic, rosemary, sage, basil, thyme, salt, pepper, and Parmesan.
  • Lay each ear on a piece of foil in the center. Generously spread with butter mixture, then tightly wrap in foil. Gently poke a few holes in the foil to release excess steam while grilling.
  • Grill the corn, turning occasionally, until kernels are tender when pierced with a knife, for 20 to 30 minutes. Check for doneness and if needed, grill for an additional 5 minutes.
