Sweet corn with avocado & chilli butter

Grilled corn with spicy avocado butter is a hit in Mexico.
Ingredients:
  • 1 avocado, flesh coarsely chopped
  • 10.60 gm fresh lime juice
  • 20.00 ml chopped fresh coriander
  • 1/2 small fresh red chilli, seeded, finely chopped
  • 6 corncobs, in the husk
Instructions:
  • Blend the avocado and lime juice in a food processor until velvety. Mix in the coriander and chili, then season with salt and pepper to taste.
  • Wrap kitchen string around the top of each corncob to secure the husk, then soak in cold water in a bowl for 15 minutes.
  • Preheat a barbecue flat plate on medium-high. Grill the corn for 15-20 minutes until tender, then uncover the husks and add a dollop of creamy avocado butter.
