Elevate summer corn with grilled cobs topped with cheesy, herb-infused butter.
Ingredients:
  • 1/2 cup butter, softened
  • 1/2 cup shredded Parmesan cheese (2 oz)
  • 1 tablespoon chopped fresh dill
  • Fresh ground pepper to taste
  • 2 tablespoons olive oil
  • 6 ears fresh sweet corn, husks removed, cleaned
Instructions:
  • Preheat gas or charcoal grill. Combine butter, cheese, dill, and pepper in a small bowl using a fork; set aside.
  • Fill a large saucepot with water and bring it to a boil. Add the corn into the boiling water and cook for 3 to 4 minutes.
  • Take the boiled corn out of the water and let it cool for a moment. Drizzle oil over each ear of corn and rub it all over.
  • Grill corn over medium heat until all sides are browned, turning occasionally. Top with butter mixture immediately and serve once butter has melted slightly.
