Irresistible sticky pork ribs with homemade BBQ sauce.
Ingredients:
  • 4 fresh corn cobs, husks attached
  • 1.5kg American-style pork ribs
  • 60g butter, softened
  • 125.00 ml finely grated parmesan
  • 520.00 gm tomato sauce
  • 53.20 gm treacle
  • 32.00 gm brown sugar
  • 40.00 ml apple cider vinegar
  • 24.40 gm worcestershire sauce
  • 20.00 ml yellow mustard powder
  • 5.00 gm smoked paprika
  • 1 1/2 tsp garlic powder
  • 1/2 tsp ground allspice
Instructions:
  • Place the corn cobs in a large shallow dish and cover them with warm water. Allow them to soak for 1 hour.
  • Prepare the barbecue sauce by combining all ingredients in a large saucepan. Cook over medium-low heat, stirring occasionally, for 10 minutes until the sauce is smooth and the flavors have developed.
  • 1. Preheat the oven to 160C/140C fan-forced and line a large baking dish with baking paper. 2. Mix 1 cup of cold water with 2/3 cup of barbecue sauce. 3. Place the ribs in a single layer in the prepared dish and pour the sauce mixture over them. 4. Cover with foil and bake for 2 hours 30 minutes or until tender, turning once. 5. Transfer the ribs to a large baking tray using tongs and brush with another 1/3 cup of sauce.
  • In a bowl, mix together butter and parmesan, then season generously with pepper. Peel back the husks and remove the silk from the corn. Rub half of the butter mixture over the corn, then pull the husks back up and twist the ends to secure.
  • Preheat a sizzling barbecue chargrill to high heat. Grill corn for 25 minutes until tender, adding ribs for the final 10 minutes. Peel back corn husks, top with remaining butter, and serve with grilled ribs.
