Grilled Pork Ribs with Chipotle Barbecue Sauce

"Whip up irresistible smoked ribs with a mouthwatering barbecue sauce."
Ingredients:
  • 4 lb pork loin back ribs (cut into 4 sections)
  • 1 tablespoon vegetable oil
  • 4 teaspoons chopped fresh or 1 1/2 teaspoons dried thyme leaves
  • 2 cups ketchup
  • 1 cup Progresso™ beef-flavored broth
  • 6 chipotle chiles in adobo sauce, finely chopped (from 7-oz can)
  • 1/2 cup packed brown sugar
  • 1/2 cup white vinegar
  • 1 teaspoon adobo sauce from chipotle chiles can
  • 4 cloves garlic, finely chopped
Instructions:
  • Preheat gas or charcoal grill for indirect cooking according to manufacturer's instructions.
  • Brush the meaty sides of the pork ribs with oil and sprinkle them with thyme. Position the pork, meaty sides up, on the unheated side of a two-burner gas grill or over a drip pan on a charcoal grill. If using a one-burner gas grill, cook over low heat. Cover the grill and cook over medium heat for 1 hour 30 minutes to 2 hours, or until the pork is no longer pink near the bone and is tender.
  • In a 3-quart saucepan, combine the Chipotle Barbecue Sauce ingredients and bring to a boil. Simmer uncovered for 15 minutes, stirring occasionally. Use the sauce to brush over the pork 2-3 times during the final 15 minutes of grilling.
  • Bring the leftover sauce to a boil and stir for 1 minute. Slice the pork into serving pieces and serve with the sauce.
