Jamestown grilled prawns

Savour the flavors of fresh Ghanaian seafood grilled over charcoal, inspired by the vibrant fishing culture of Jamestown, Accra.
Ingredients:
  • 1 kg raw king prawns or tiger prawns (2lb 4oz)
  • 4 tablespoons coconut oil
  • 1 onion finely shredded or grated
  • 2 lemons zest and juice
  • 2 tablespoons chopped fresh thyme leaves
  • 1 heaped teaspoon ground ginger or grated fresh root ginger
  • 1 teaspoon grated garlic
  • 2 teaspoons ground hot pepper or substitute with cayenne pepper, to taste
  • 1 heaped teaspoon dried ground prawn/shrimp powder
  • 1 teaspoon sea salt
Instructions:
  • Prepare the prawns by washing them and removing the heads, leaving the shells intact for a stunning presentation. Butterfly the prawns by scoring down the belly with a sharp knife and opening them out to create more surface area for seasoning and deveining. Rinse thoroughly, pat dry, and marinate the prawns by mixing them with 2 tablespoons of coconut oil and all other ingredients. Let them soak in the marinade for 30 minutes in the fridge or have your fishmonger prepare them. Grill the prawns on skewers for 3 to 4 minutes per side after brushing them with coconut oil and preheating the barbecue.
