Quick and easy salad perfect for busy nights.
Ingredients:
  • 2 tight-hearted baby cos lettuce
  • 2 green onions, cut into 8cm lengths, then finely shredded lengthways
  • 82.50 ml tightly packed dill sprigs
  • 150g fennel
  • 62.50 ml tightly packed torn flat-leaf parsley leaves
  • 40.00 ml white wine vinegar
  • 80ml olive oil
Instructions:
  • Prepare the cos lettuce by discarding the darker outer leaves (save for sandwiches) and thinly slicing the remaining leaves widthways. Mix the shredded lettuce with onions, dill sprigs, drained fennel, and parsley in a large bowl, then season with salt and pepper according to taste. Transfer the flavorful mixture to a shallow serving bowl.
  • Combine vinegar and oil in a small bowl, then pour over salad and serve right away.
