Green Salad with Fresh Herbs and Red Wine Vinaigrette

Quick and fresh herb salad using leftover herbs for a healthy meal.
Ingredients:
  • For the salad
  • 1 large head butter lettuce (about 9-inch wide at crown)
  • 1/2 cup lightly packed flat-leaf parsley leaves, roughly chopped
  • 1/4 bunch of chives (about 35 thin chives), cut crosswise into 1/2-inch-long pieces
  • 8 large mint leaves, very thinly sliced
  • For the dressing
  • 1 1/2 tablespoons olive oil
  • 2 teaspoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon water
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon freshly ground black pepper
Instructions:
  • Prepare the lettuce: Tear it into large pieces, approximately 2 to 3 inches long, yielding roughly 4 to 5 cups when lightly packed.
  • Place the lettuce and herbs in a spacious salad bowl, ready for use.
  • Prepare the salad dressing by adding olive oil, vinegar, mustard, water, salt, and pepper to a sealed jar. Shake vigorously for 10 seconds until well combined.
  • Drizzle about 2/3 of the dressing over the salad, toss gently, taste a piece of lettuce, and add more dressing if desired.
  • Serve the salad immediately after dressing to enjoy it at its freshest. Feel free to rate the recipe below!
