Whip up a quick and delicious breakfast by microwaving crispy prosciutto and soft herb eggs.
Ingredients:
  • 8 (about 125g) thin slices prosciutto
  • 6 eggs, at room temperature
  • 60mls (1/4 cup) milk
  • 20g (1 tbsp) butter, at room temperature
  • 20.00 ml finely chopped fresh chives
  • Ground black pepper, to taste
  • 4 bagels, split, to serve
Instructions:
  • Halve the prosciutto slices. Place them in a single layer between paper towels on a microwave-safe plate. Microwave on High for 3-4 minutes until golden. Allow to cool and then break into pieces.
  • Combine the eggs and milk in a microwave-safe bowl (20cm in diameter and 9cm deep with a 1.5-litre/6 cup capacity) using a fork until well mixed. Stir in the butter.
  • Microwave mixture for 4 minutes on Medium-Low/350 watts/30%. Stir with a fork, add chives, and microwave for an additional 2 minutes. Stir again with a fork, microwave for 1-2 minutes, or until slightly runny. Let it rest for 1 minute before serving.
  • Preheat the grill on high while you toast the bagels, cut-side up, until golden brown.
  • Place the bottom halves of the bagels on serving plates, layer with herb scrambled eggs and prosciutto, sprinkle with pepper, and serve promptly with the remaining bagel halves.
