Elevate your scrambled eggs with aromatic spices and herbs. Enjoy with wholemeal chapatis for a flavorful and quick breakfast that keeps you satisfied until lunch.
Ingredients:
  • 1 small red onion
  • 1 fresh red or green chilli
  • 1 clove of garlic
  • ½ a bunch of fresh coriander
  • 2 large ripe tomatoes
  • 4 wholemeal chapatis
  • ½ teaspoon cumin seeds
  • 1 teaspoon garam masala
  • ½ teaspoon ground turmeric
  • 6 large free-range eggs
Instructions:
  • 1. Preheat the oven to 160ºC/325ºF/gas 3. 2. Prepare ingredients: Finely slice the onion, deseed and slice the chilli, crush the garlic, roughly chop the coriander leaves, finely chop the coriander stalks, and chop the tomatoes. 3. Warm the chapatis in the oven. 4. Heat olive oil in a pan, add onion, chilli, garlic, and coriander stalks, cook until softened. 5. Add spices and cook until fragrant. 6. Beat the eggs with salt and pepper. 7. Add tomatoes to the pan, then eggs, cook on low heat until eggs are cooked to your liking. 8. Remove from heat, stir in coriander leaves. 9. Serve with warm chapatis, sprinkle with extra chilli if desired.
