Silky swede puree with sage & walnut burnt butter

Make creamy swede mash with nut butter sauce using only 4 ingredients.
Ingredients:
  • 1.2kg swede, peeled, coarsely chopped
  • 80g Butter, chopped
  • 1 bunch fresh sage, leaves picked
  • 60g (1/2 cup) walnut pieces, toasted
Instructions:
  • Boil the swede in a large saucepan for 15 minutes until tender, then drain and mash it in the same pan. Use a stick blender to puree until smooth. Season to taste and transfer to a serving bowl.
  • In a clean saucepan over medium-high heat, melt the butter until foamy. Sauté the sage for 1 minute until crispy and the butter turns golden. Mix in the walnuts and pour over the mash.
