Herbed and Spiced Roasted Beef Tenderloin

Elevate your roast with classic seasonings. Roast two tenderloin ends for even cooking after coating with aromatic rub and chilling for 6 hours.
Ingredients:
  • 2 tablespoons fresh rosemary
  • 2 tablespoons fresh thyme leaves
  • 4 cloves garlic
  • 1 large shallot, peeled and quartered
  • 1 tablespoon grated orange zest
  • 1 tablespoon coarse salt
  • 1 teaspoon freshly ground black pepper
  • 0.5 teaspoon ground nutmeg
  • 0.25 teaspoon ground cloves
  • 2 tablespoons olive oil
  • 2 (2 pound) beef tenderloin roasts, trimmed
Instructions:
  • Combine fresh herbs, aromatic spices, garlic, shallot, orange zest, salt, pepper, and a touch of oil in a food processor. Blend until a smooth paste forms. Coat tenderloins evenly with the mixture, then refrigerate in a covered glass baking dish for at least 6 hours.
  • Preheat your oven to a toasty 400 degrees F (200 degrees C), then elegantly position the tenderloins on a rack in a spacious roasting pan.
  • Roast beef in a preheated oven until a meat thermometer reads 140 degrees in the center, for about 35 minutes. Take it out, cover with foil, rest for 10 minutes, then slice and serve.
