Try these flavorful lamb racks seasoned with fresh herbs and garlic for a delicious and effortless meal.
Ingredients:
  • 85g butter
  • 20.00 ml fresh flat-leaf parsley, finely chopped
  • 20.00 ml fresh thyme, finely chopped
  • 20.00 ml fresh oregano, finely chopped
  • 2 garlic cloves, crushed
  • 2 Lamb Racks, French trimmed
  • 1 zucchini, thinly sliced into ribbons
  • 120g pkt Baby Spinach
  • 1 bunch radishes, thinly sliced
  • 100g Australian fetta, crumbled
Instructions:
  • - Preheat your oven to 200C. - Mix Bertolli with Butter, parsley, thyme, oregano, and garlic in a bowl. - Rub three-quarters of the herb mixture over the lamb. - Place the lamb in a roasting pan, season it, and roast for 12 minutes or until done to your preference. - Cover the lamb with foil and let it rest for 10 minutes before serving.
  • Place the zucchini, spinach, radish, and feta on a platter. Season with salt and pepper. Gently warm the remaining herb mixture in a saucepan and drizzle over the salad. Enjoy alongside the lamb.
