Ingredients:
  • 1 Reynolds® Oven Bag
  • 1 cup dry red wine
  • 0.5 cup chopped shallot
  • 0.25 cup olive oil
  • 2 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 1 teaspoon dried rosemary, crushed
  • 0.5 teaspoon dried sage, crushed
  • 0.5 teaspoon dried thyme, crushed
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 1 (4 pound) beef rib roast
  • 2 tablespoons butter
Instructions:
  • Prepare a roasting pan that is at least 2 inches deep by inserting a Reynolds® Oven Bag into it.
  • In a bag, mix together wine, shallot, olive oil, Worcestershire sauce, garlic, flour, rosemary, sage, thyme, salt, and black pepper. Gently massage the ingredients to blend. Add beef rib roast to the bag and secure it with the provided tie.
  • Allow the flavors to meld beautifully in the refrigerator for 6 to 24 hours, remembering to turn the bag every now and then.
  • Preheat your oven to a toasty 325 degrees F.
  • Make six 1/2-inch slits on top of the bag to release steam. Insert an oven-safe meat thermometer through one of the slits into the center of the roast, ensuring it doesn't touch the bone. Fold the ends of the bag into the pan for baking.
  • Position the pan in the oven ensuring there is ample space for the bag to expand while cooking, making sure it does not touch the heating elements, walls, or racks, and that the bag does not hang over the pan.
  • Roast until reaching your preferred level of doneness. Cooking times are 1 3/4 to 2 1/4 hours for medium rare (135 degrees F) or 2 1/4 to 2 3/4 hours for medium (150 degrees F). Rest in the oven bag for 15 minutes. Ensure the final meat temperature is 145 degrees F for medium rare or 160 degrees F for medium. Gently open the top of the oven bag, being cautious to support it with a pan.
  • Remove meat from the roasting pan and place it onto a cutting board. Gently pour the juices from the oven bag into a baking dish; discard the bag. Remove any excess fat from the juices. Optionally, mix in butter. Pour the flavorful pan juices over the sliced meat and serve while hot.
