Healthy herb-infused spaghetti squash recipe bursting with flavors of chervil, parsley, basil, chives, and sage.
Ingredients:
  • 1 small spaghetti squash, halved and seeded
  • 2.5 tablespoons butter
  • 0.5 tablespoon chopped fresh chervil
  • 0.5 tablespoon chopped fresh basil
  • 0.5 tablespoon chopped fresh parsley
  • 0.5 tablespoon chopped fresh sage
  • 0.5 tablespoon chopped fresh chives
  • 0.125 teaspoon freshly ground black pepper
Instructions:
  • Heat your oven to 375 degrees F (190 degrees C).
  • Place the spaghetti squash halves cut-side down in a baking dish and add water until it reaches 1/2-inch up the sides of the dish. Cover tightly with aluminum foil.
  • Roast the squash in the preheated oven for about 45 minutes until tender. Flip the squash, cover with foil, and bake for an additional 15 minutes until very tender. Let it cool slightly, then use a fork to separate the squash strands from the peel and transfer to a bowl.
  • In a skillet over medium heat, melt butter. Add spaghetti squash strands, chervil, basil, parsley, sage, chives, salt, and pepper. Cook for 2 to 3 minutes until flavors meld and everything is heated through.
