Ingredients:
  • 1 cup shortening
  • 1 cup packed brown sugar
  • 3 eggs
  • 1 teaspoon lemon extract
  • 2.5 cups all-purpose flour
  • 2.5 teaspoons ground cinnamon
  • 0.33333298563957 cup white wine
  • 1 teaspoon baking soda
  • 1 cup raisins
  • 2 cups white wine
Instructions:
  • Preheat your oven to a toasty 375 degrees F (190 degrees C) and get your baking sheets ready by lining them with some parchment paper.
  • Combine the raisins or chopped dates in a bowl and generously pour white wine over them. Allow them to soak for the perfect sweetness and flavor infusion.
  • Mix the shortening with the brown and white sugar until it's light and fluffy. Blend in the eggs along with the lemon and/or vanilla extracts.
  • Combine the flour, cinnamon, and salt, stirring until well mixed.
  • Combine 1/3 cup of wine with baking soda and mix it into the shortening mixture. Add flour and then fold in the drained raisins and walnuts.
  • Spoon the dough onto the baking sheets and bake at 375°F (190°C) for approximately 10 minutes.
