High-altitude banana chocolate chip cookies.
Ingredients:
  • 3.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.25 teaspoon baking soda
  • 1 cup butter, softened
  • 0.5 cup brown sugar
  • 2 eggs
  • 1 cup mashed banana
  • 2 cups semisweet chocolate chips
Instructions:
  • Begin by preheating the oven to a toasty 375 degrees F (190 degrees C). Next, sift together the flour, baking powder, baking soda, and salt, then set aside.
  • Cream together butter, sugar, and brown sugar in a large bowl until light and fluffy. Beat in the eggs one at a time, then mix in the vanilla and mashed banana. Gently incorporate the dry ingredients until just combined, then fold in the chocolate chips. Using a rounded spoon, drop the dough onto prepared cookie sheets.
  • Bake in the preheated oven for 11 to 13 minutes. Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
