Quick and effortless high-altitude cornbread made with pantry staples.
Ingredients:
  • 1 cup all-purpose flour
  • 0.25 cup white sugar
  • 3 teaspoons baking powder
  • 1 cup yellow cornmeal
  • 2 eggs
  • 1 cup milk
  • 0.25 cup butter, melted
Instructions:
  • Preheat your oven to a toasty 425 degrees F (220 degrees C) and generously grease a 9x9-inch baking pan.
  • Combine the flour, sugar, baking powder, and salt in a sifter. Gently mix in the cornmeal.
  • In a separate bowl, lightly beat the eggs, then mix in the milk and melted butter. Combine this with the flour mixture and gently stir until just moistened. Transfer the batter to the prepared pan.
  • Bake in the preheated oven for 20-22 minutes, or until a toothpick inserted into the cornbread comes out clean.
