High Temperature Eye-of-Round Roast

Transform tough eye of round roast into a mouthwatering dish by seasoning and roasting at high heat until tender.
Ingredients:
  • 1 (3 pound) beef eye of round roast
  • salt and pepper to taste
Instructions:
  • Preheat the oven to a sizzling 500 degrees F (260 degrees C).
  • Season the roast generously with salt and pepper and place it in a roasting pan or baking dish without covering or adding water.
  • Place the roast in the hot oven and immediately lower the temperature. Roast for 21 minutes (7 minutes per pound), then turn off the oven and allow the roast to rest for 2 1/2 hours without opening the door.
  • Take the roast out of the oven and verify that the internal temperature has reached a minimum of 145 degrees F (65 degrees C). Slice thinly for serving.
