Italian cottage pie with cauliflower cheese mash

Italian beef and cauliflower cheese fusion - pure perfection!
Ingredients:
  • 18.20 gm extra virgin olive oil
  • 2 celery stalks, finely chopped
  • 1 large carrot, finely chopped
  • 750g beef mince
  • 2 garlic cloves, finely chopped
  • 80.00 ml plain flour
  • 44.40 gm tomato paste
  • 127.50 gm beef stock
  • 410g can crushed tomatoes
  • 3 sprigs fresh thyme
  • 2 tsp fresh rosemary leaves, chopped
  • 187.50 ml frozen peas
  • 187.50 ml cheese
  • 650g cauliflower, cut into florets
  • 600g cream delight potatoes, peeled, chopped
  • 25g butter
  • 386.25 gm milk
Instructions:
  • In a large deep frying pan over medium-high heat, heat oil until shimmering. Sauté onion, celery, and carrot for 5 minutes, stirring occasionally until softened. Add mince and cook for another 5 minutes, breaking it up with a wooden spoon, until lightly browned.
  • Combine garlic, flour, and tomato paste in the pot, stirring well. Slowly pour in stock and tomatoes, then season with salt and pepper. Bring to a boil, then add thyme and rosemary. Reduce heat and simmer for 15 minutes until the mixture thickens and vegetables soften.
  • While the cauliflower and potato are boiling, mash them together in a pan over low heat until almost smooth. Remove from heat.
  • Begin by melting butter in a saucepan over medium heat. Then, add flour and cook while stirring for 1 minute until it starts to bubble. Remove from heat and slowly whisk in milk until smooth. Return to heat and continue stirring until the mixture just begins to boil and thickens. Remove from heat and season with salt and pepper. Finally, mix 1/2 of the sauce into the cauliflower mash.
  • 1. Preheat the oven to 200C/180C fan-forced. 2. Remove and discard thyme from mince mixture, then stir in peas. 3. Spoon the mince mixture into an 8-cup-capacity ovenproof dish. 4. Dollop with mash and drizzle remaining sauce over the mash. 5. Sprinkle with cheese and place the dish on a baking tray with sides. 6. Bake for 35 to 40 minutes or until the top is golden. 7. Allow it to stand for 5 minutes before serving.
