Cornmeal buttermilk cakes: Ideal Southern side dish.
Ingredients:
  • 2 eggs
  • 1 cup Gold Medal™ all-purpose flour
  • 1 cup yellow cornmeal
  • 1 tablespoon sugar
  • 3 1/2 teaspoons baking powder
  • 3/4 cup buttermilk
  • 1/3 cup water
  • 1/4 cup vegetable oil
  • Vegetable oil for frying
Instructions:
  • In a big bowl, combine flour, cornmeal, sugar, baking powder, and salt. In a separate bowl, whisk together eggs, buttermilk, water, and 1/4 cup oil. Pour the wet ingredients into the dry ingredients and stir until just combined.
  • Heat 2 tablespoons of oil in a heavy skillet over medium heat. Pour 1/4 cup of batter for each hoecake into the skillet. Cook until both sides are golden brown. Repeat with the rest of the batter, adding more oil as needed. Enjoy!
