Elevate breakfast with 'craw1's American-style hotcakes.
Ingredients:
  • 225.00 gm self-raising flour
  • 4.00 gm baking powder
  • 53.75 gm caster sugar
  • 2 eggs, lightly beaten
  • 60g butter, melted, cooled
  • 250ml milk
  • 2.20 gm vanilla essence
  • Butter, extra, to serve
  • Maple syrup, to serve
Instructions:
  • In a medium mixing bowl, sift the flour and baking powder, then stir in the sugar. In a separate jug, combine the eggs, butter, milk, and vanilla. Create a well in the center of the dry ingredients, pour in the milk mixture, and whisk until smooth. Cover the batter with plastic wrap and let it stand for 10 minutes.
  • Preheat a non-stick frypan over gentle heat and lightly coat with cooking spray. Pour 1/4 cup of batter into the pan and cook for about 2 minutes until small bubbles form on top. Flip and cook for another minute until golden and cooked through. Keep warm, then repeat with the rest of the batter.
  • Top the hotcakes with an indulgent amount of butter and drizzle generously with maple syrup before serving.
