Indulge in aromatic pancakes with cinnamon butter.
Ingredients:
  • 1kg apples, peeled, cored and thinly sliced
  • 55g caster sugar
  • 60ml water
  • 21.00 gm lemon juice
  • Ground cinnamon, to serve
  • 100g butter, softened
  • 1.25 gm ground cinnamon
  • 375g self-raising flour
  • 4.00 gm baking powder
  • 750ml buttermilk
  • 80g butter, melted, cooled
  • 1 egg, whisked
Instructions:
  • In a medium saucepan, combine apples, sugar, water, and lemon juice. Cook covered over medium-low heat for 15-20 minutes until apples are tender yet firm. Transfer to a bowl and keep aside.
  • Whip butter with electric beaters until pale, then mix in cinnamon.
  • In a large bowl, sift together flour, baking powder, and sugar. Add buttermilk, butter, and egg. Whisk until smooth.
  • Prepare the pans by brushing a touch of extra melted butter on them. Heat over medium heat. Pour 1/3 cup of batter into each pan. Cook until bubbles form on the surface, then gently flip and cook for another minute.
  • Place the pancakes on a plate and cover them loosely with a clean tea towel to keep warm. Repeat with the rest of the batter, greasing the pan between batches. Lower the heat slightly if the pan becomes too hot.
  • Top the pancakes with a delightful apple and cinnamon butter, then generously sprinkle with extra cinnamon.
