Impress loved ones this holiday with a festive sugar cookie pie, elevated with peppermint frosting. Easy to make, maximizing quality time.
Ingredients:
  • 1/4 cup red, green and white candy sprinkles
  • 1 1/2 cups powdered sugar
  • 3 tablespoons butter, softened
  • 1/2 teaspoon vanilla
  • 3 to 4 teaspoons milk
  • 1/8 teaspoon peppermint extract
  • Assorted holiday sugar sprinkles or candies
Instructions:
  • Preheat your oven to 325°F and generously spray the bottom of a 9-inch pie plate with cooking spray.
  • Combine cookie mix, 1/2 cup of softened butter, and egg in a large bowl until a soft dough forms. Mix in candy sprinkles, then press the dough into the bottom of a pie plate.
  • Bake for 33 to 38 minutes until the center is set and the edges are golden brown. If necessary, lightly cover the edges of the cookie with foil to prevent excessive browning. Allow to cool completely, approximately 1 1/2 hours.
  • In a medium bowl, blend powdered sugar, 3 tablespoons of softened butter, vanilla, and 3 teaspoons of milk with an electric mixer until smooth and creamy. Then mix in the peppermint extract. Add more milk as needed to achieve a spreadable frosting consistency.
  • Spread the luscious frosting generously over the cookie pie, then have fun adding festive holiday sprinkles or candies on top. When ready to enjoy, simply slice the cookie pie into wedges.
