Holiday roast turkey Cordon Bleu is heightened with a melty ham and cheese filling, savory pesto, tangy mustard, and sweet cranberries for a flavorful twist.
Ingredients:
  • 1 teaspoon vegetable oil
  • 1 (4 pound) boneless, skin-on turkey breast
  • 2 teaspoons kosher salt, divided
  • 1 teaspoon freshly ground black pepper, divided
  • 0.125 teaspoon ground cayenne pepper
  • 2 tablespoons Dijon mustard
  • 2 tablespoons prepared pesto sauce
  • 0.25 cup dried cranberries, or to taste
  • 4 ounces ham, thinly sliced
  • 5 thin slices provolone cheese
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and generously grease a baking dish with vegetable oil.
  • Lay the turkey breast skin-side down on a flat surface. Trim off any connective tissue and butterfly it open along the natural seam, making sure it's evenly thick without cutting all the way through.
  • Season the turkey breast with a tantalizing blend of 1 teaspoon of salt, ½ teaspoon of pepper, and a hint of cayenne. Smother the surface with Dijon mustard followed by a generous layer of pesto. Sprinkle dried cranberries on top, then arrange ham and provolone cheese over the turkey.
  • Roll the turkey breast to enclose the filling, ensuring the skin is facing up. Secure by tying with kitchen string at 1-inch intervals along the length of the roast. Place in the baking dish and season the top and sides with the remaining salt and pepper.
  • Roast in the center of the preheated oven until it reaches an internal temperature of 145 degrees F (65 degrees C), which should take about 1 ½ to 2 hours.
  • After baking, allow it to rest for a minimum of 15 to 20 minutes to enhance flavors. Remove strings and slice before serving.
